Thoughts
A pretty simple "use the leftovers" meal that I kinda love. It's basically a rice pilaf with a bit of meat thrown in. Not too much to say other than great for a quick healthy dinner.
Beef and Rice Milanese
1 cup long grain white rice, uncooked
1 small diced onion
1/4 cups hard margarine
2 1/2 cups water
1 tbsp beef bouillon powder
1 cup chopped roast beef
1/4 tsp pepper
1 tbsp parsley flakes
1/3 cups grated Parmesan cheese
Saute rice and onion in margarine in frying pan until golden. Add next 5 ingredients, cover, and bring to a boil. Reduce heat and simmer for 15 minutes until rice is cooked. Add cheese and stir until blended. Garnish with fresh parsley.
