What a fantastic, tasty meal. The spices got a touch charred when I had to answer the door for Canada Census 2016, but in a what it almost helped. A slight bitter char with spiced pasta made everything great. Place a nice sweet side salad and you have a pretty impressive meal.
Cajun Chicken Pasta
1 lb chicken
2 tbsp olive oil
12 oz dry linguine
2 tbsp butter
1 clove minced garlic
3 tbsp flour
1 1/2 cups milk
1/2 cup heavy cream
1/3 cups shredded Parmesan cheese
1 red bell pepper
1 yellow bell pepper
1/2 large red onion
2 cups button mushrooms
Cajun Seasoning:
2 1/2 tsp paprika
2 tsp salt
2 tsp garlic powder
1 1/4 tsp oregano
1 1/4 tsp thyme
1 tsp onion powder
1 tsp pepper
1/2 tsp cayenne pepper
Brush chicken with 1 tbsp of olive oil and 1/3 of the Cajun seasoning. Grill on bbq or stove until cooked through, 8-10 minutes, flipping once. Remove from heat and cover in foil for 5 minutes.
Cook pasta according to instructions. Reserve 1/3 cup of pasta water for later.
Melt butter over medium heat. Stir in garlic and flour cooking for 1 minute stirring constantly. Slowly pour in milk and whisk until smooth. Pour in 1/3 of the Cajun seasoning and bring mixture to a boil then reduce to low heat. Add cream and cheese and cook until cheese has melted.
Heat 1 tbsp of oil and saute red and yellow peppers and onion. Add remaining Cajun seasoning and mushrooms. Toss pasta and sauce and add pasta water until desired consistency is reached. Add veggies and chicken.
