Thoughts
This is a pleasant recipe. Pretty quick to make on a weekend then grab in the morning with a cup of coffee. The dough looked quite firm when I made it and I was afraid the muffins would be dense, but they rose beautifully.
Cheddar Bacon Breakfast Muffins
3 slices diced Bacon
1 tbsp Olive Oil
200g diced Button Mushrooms
1 1/2 cups All Purpose Flour
1 tbsp Baking Powder
1/4 tsp Salt
1/4 tsp Pepper
1 cup grated Cheddar Cheese
2 tbsp Chives
80g melted Butter
2 eggs
2/3 cups Milk
Cook & dice bacon. Add oil to pan and fry mushrooms. Sift flour, baking powder, and salt together. Add cheese & chives. Whisk butter, egg, and milk together and pour into dry ingredients and mix. Fold in bacon and mushrooms. Spoon batter into a greased muffin tray (12 total). Bake for 18 minutes @ 390F (200C).
