Oh yeah! This is a great side or appetizer for nearly any stir fry, or really any dish, not to mention something great to bring to a pot luck. I ended up using spring roll paper instead of egg roll (as I couldn't find them in the supermarket, but the food still turned out splendidly! A touch of sweet & sour sauce and now my mouth is very burnt, but I'm okay with it.

Chicken Egg Rolls

Oil
2 Cloves Garlic
1 tbsp fresh Ginger

2 Chicken Breasts
Salt & Pepper
1 cup mushrooms
1 cup cabbage
1 cup carrots
1/4 cup scallions
Egg Roll Wrapper

In oil, fry chopped garlic and ginger. Add strips of chicken and cook through. Season with salt & pepper. Add mushrooms, cabbage, carrots, and scallions to pan and cook. Roll in wrapper and seal with water/egg wash. Deep fry in oil and serve with plum sauce.
