Rather delicious I would say! The filling tastes great and was still a bit spicy even though I forgot the jalapeno. Since I only made a half recipe of the tortillas and a full mix of the filling, the taquitos are a bit overstuffed and probably should be called burritos. Either way, so good, especially with the homemade refried beans.

Chicken Taco Taquitos

2 Chicken Breasts
2 tbsp Taco Seasoning
1 tbsp Olive Oil
1/2 cup frozen Corn
1/2 cup Refried Beans
1/2 cup Salsa
1 cup Cheddar Cheese
2 tbsp Cilantro
12 6" Flour Tortillas
1/4 cup Butter

Preheat oven to 450F. Season diced chicken with taco spices and cook through in olive oil on a large skillet. Add corn, beans, salsa, and cheddar to the skillet and cook for 2 more minutes until corn is no longer frozen. Add cilantro. Grease a baking pan. Fill tortillas with filling, wrap tightly, and place in pan. Brush with melted butter and bake for 15 minutes.
