I like noodles. Like, a lot. This dish is one of my new favourites with the tasty wheat noodles and sauted cabbage, mmmm. It's another great, quick meal that is easy to store (easier if you use steamed rice instead of noodles) and tastes great reheated. The most important part is to not overcook the noodles, go al dente and err on the side of caution.
Chicken Yakisoba
2 packets (11 oz yakisoba noodles)
2 chicken thighs (or other cut) diced and seasoned w/ salt & pepper
2 cups shredded cabbage
1 small carrot julienned
3 shiitake mushrooms
1/2 onion
Spring onions for garnish
Sauce:
2 tbsp oyster sauce
1 tsp soy sauce
1 tsp sugar
1 tsp sesame oil
1/2 tsp pepper
salt
3 tbsp water
Combine sauce, mix well, and set aside. Cook noodles according to directions. Heat 3 tbsp of vegetable oil and cook onions and chicken. Cook until chicken is nearly cooked through and add carrot and cabbage. Add noodles and mix with the sauce. Garnish with spring onion.
