Thoughts
I messed up this recipe pretty badly. I think this one came from Pinterest and a comment may have led me astray. To keep up the entertainment on the stream, I always want to be doing something, either moving, cooking, or talking (most of the time a combination of all 3). Grilling corn results in downtime while the corn sits on the oven or barbecue and I didn't want to simply stand there waiting for corn to bake. One of the comments on the pin said you could substitute canned corn for grilled. In the end the mixture had much too much corn and it did not gel together in the pan. I'll definitely try and make this type of food again, but with a different list of instructions.
Corn Fritter
2 cups grilled (or canned) corn
1/3 cups yellow cornmeal
1/4 cups all purpose flour
1/2 tsp baking powder
1/2 tsp salt
1/2 tsp pepper
Handful of chopped parsley
1/3 cups milk
Oil for frying
Mix cornmeal, flour, baking powder, salt, pepper, and parsley. Add milk and mix until thick and well combined. Add corn and mix well. Measure 1/3 cup of the corn mixture into a hot pan with oil and fry 5 minutes each side.
