This is a very unique recipe, one my French friend was not too fond of when I told here about it during a real crepe party. Honestly, it should be called French Toast Tortilla instead of a crepe. It is a good alternative if you do not have the tools or experience in making real crepes, a skill I have yet to master. Probably best as an alternative to pancakes when your kids want to drink syrup.
A Single Crepe
1 extra large egg
1 tbsp heavy cream
A few drops of vanilla extra or rum
12" flour tortilla
1 tbsp butter
Whisk egg and cream in a wide bowl. Add vanilla/rum. Lay tortilla in the bowl, push down to the bottom, and rotate so the tortilla is covered in the egg mixture.
Heat butter in a pan and lay tortilla wet side down on hot pan. When it begins to bubble flip and pour remaining egg mixture over the cooked side and spread using fingers. When the bottom is mottled brown flip again and cook so that the now bottom side is also mottled. Fill with frozen berries warmed in a pot and squeeze of lemon.
