Thoughts
I loved these! This is another delicious appetizer I would bring to a potluck or family get-together. The edamame and basil were earthy/woody and the rest was sweet and satisfying. An interesting and pleasant experience using wonton wrappers for the first time as well. It took 15 minutes to find them next to the tofu in my local super market.
Golden Edamame Dumplings
1 1/2 cups Frozen Cooked Edamame
1/4 cup Fresh Basil
6 tbsp Olive Oil
1 tbsp Lemon Juice
2 tsp Yellow Miso Paste
1 tsp Sugar
1 clove Garlic
1/2 tsp ginger
1/4 tsp Salt
Pinch Cayenne Pepper
36 Wonton Wrappers
1/4 cup Soy Sauce
2 tbsp Rice Vinegar
2 tsp Honey
1/2 tsp Hot Sauce
1 tbsp Green Onion
In a food processor combine edamame, basil, olive oil, lemon juice, miso paste, sugar, garlic, ginger, salt, and cayenne pepper. Spoon 1 tsp of the paste onto a wonton wrapper, brush water onto edge of wrapper, and fold over to form a sealed triangle. In a large skillet heat 1 tbsp olive oil to a med-high heat and lay 12 dumplings to cook for 1 minute until the bottom of the dumpling is golden. Pour 1/4 cup water into the pan and cover with a lid. Let steam for 4 minutes. Drain pan and repeat until all the dumplings are cooked. Combine soy sauce, rice vinegar, honey, hot sauce, and green onions for the dipping sauce.
