A tasty little no-bake snack made almost entirely from Bulk Barn ingredients. Oh and now I'm addicted to coconut.

Energy Bites

1/2 cup peanut butter
1/3 cups honey
1 tsp vanilla extract
1 cup old-fashoned oats (raw)
2/3 cups sweetened shredded coconut, toasted & cooled
1/2 cup ground golden flaxseed meel
6 tbsp chocolate chips

Stir together peanut butter, honey, and vanilla extract. Add remaining ingredients and stir until evenly coated. Chill for 1 hour then shape into 1" balls. No baking required.
