French Canadian Onion Soup

  • 6 onions

  • 1.5L stock

  • 2 tbsp flour

  • 1 cup sherry

  • Soy sauce

  • Fish sauce

  • Worcestershire sauce

  • Baguette

  • Garlic

  • Olive Oil

  • Cheddar Cheese

  1. Cut onions into slices. Mince garlic and marinade in olive oil.

  2. Heat oil in a pot over medium low head. Add onions and caramelize over medium heat. Stir constantly and scrape down the pot. The onions are done when they are soft, jammy, and brown, approx 20 minutes. Add flour and cook for 1-2 minutes.

  3. Deglaze the pot with sherry. Once the alcohol is cooked off, add the beef broth, soy, fish, and worcestershire sauces. Simmer for 30 minutes.

  4. Slice the baguette, brush with garlic oil, and place on a baking sheet. Toast bread until toasted.

  5. Ladle soup into broiler-safe bowl, top with toast and cheese. Broil on high for until cheese is melted and starting to brown.
