Ginger Fried Rice

1/2 cup peanut oil
2 tbsp garlic
2 tbsp ginger
salt
2 cups rinsed & dried thinly sliced leeks
4 cups cooked rice (leftover or fresh cooled & dried to room temp)
4 eggs
2 tsp light sesame oil
4 tsp soysauce

Heat half of the peanut oil. Add garlic and ginger and cook until light brown. Remove garlic and ginger, leaving oil in the pan. Add 2 tbsp of peanut oil and leeks, cooking for 10 minutes until tender but not brown. Season with salt. Add rice and cook stirring often.

Fry eggs sunny side up until white is set. Divide rice, top with an egg, drizzle with 1/2 tsp of sesame oil, 1 tsp soy sauce, and sprinkle with crisped garlic and ginger.
