A couple of firsts while making this recipe. First time using a mortar & pestle and, oddly enough, first time cooking avacados. It's more than apparent on stream as Jacky quickly points out all 5 are over ripe and pokes a bit of fun at me for it. The quac turned out superbe and the nachos, well, you just cannot go wrong with them. As a note, quacamole does not store well and should be made and consumed in a single sitting.

Oh, and for nachos, put whatever you want on chips and broil for 5-10 minutes.

Classic Guacamole

2 tbsp finely chopped onion
1 tbsp minced jalapeno chile
1/2 tsp salt
1/4 cups chopped cilantro
1 large avocado
squeeze of lime

Mash the onion, chile, salt, and half the cilantro to a paste in a mortar. Score the avocado flesh and scoop it into the mortar and mash it. Toss in the remaining cilantro and mix in with a fork. Season to taste with lime juice.
