Good stuff! This recipe ignited a love of Hoisin sauce and I accidentally bought an extra bottle of it so now I'll have to make more. Love the stir frys using a peanut sauce.
Hoisin Peanut Chicken
1/4 cup Hoisin Sauce
1/4 cup Peanut Butter
1/4 cup Soy Sauce
1/4 cup Water
2 tbsp Rice Vinegar
2 tbsp Lime Juice
2 tbsp Honey
1 tbsp Vegetable Oil
1 tsp Fresh Ginger
1/4 tsp Red Pepper Flakes
4 Chicken Breasts
12 oz Rice Noodles
1 tbsp Vegetable Oil
2 Garlic Cloves
2 tsp Ginger
2 cups Snow Peas
1/2 cup Chopped Roasted Peanuts
Using the first list, create a marinate for the chicken. Dice the chicken and let sit for 20 minutes in the sauce. Cook rice noodles as directed on the packaging. In vegetable oil fry garlic and ginger until pungent. Add chicken and cook through. Remove from pan and sear snow peas. Top cooked noodles with peas, chicken, and peanuts.
