The spaghetti itself is light and pleasant. I agree with the author that after cooking to al dente you should rinse the pasta in cold water to prevent the pasta from becoming pasty while the spinach cooks. Honestly, this would best be served as a bed for fish, instead of a meal by itself. Also, the spinach wilts quickly, so only cook for a couple minutes
Lemon Spaghetti
12oz Spaghetti Pasta
2 tbsp Butter
4 cloves Garlic
7 cups chopped Baby Spinach
1/4 cups Chicken Broth
1 Lemon
6 tbsp Lemon Juice
1/4 cups Parmesan Cheese
Cook pasta to al dente and rinse with cold water. Heat butter in a skillet and add garlic to cook for 2 minutes. Add chopped spinach and chicken broth in with the garlic and cook until spinach is wilted. Add noodles and toss with tongs. Pour in lemon juice and zest, mix, and heat for 2 more minutes. Sprinkle with cheese.
