A new favourite dish to make for guests is Pad Thai! There is a little takeaway Thai place near my house that has an amazing Pad Thai. This recipe mimics it beautifully. It's difficult to describe since the dish is so easy, but this comfort food simply always provides. Just don't use metal tipped tongs on your non-stick skillets...

Pad Thai

Soak 1 lb rice noodles as per package directions

Combine & set aside:
1/4 cups tomato sauce
1/4 cups fish sauce
1/4 cups lime juice
1 tsp chili sauce

Fry in sesame oil & set aside:
1 chicken breast
1 lb firm tofu
2 chilis

Stirfry & set aside:
3 green onions
2 cloves garlic

Return all to pan and reheat, pouring sauce over all. Sprinkle with chopped peanuts & bean sprouts.
