Thoughts
Turned out beautifully. Great stream and great result. I drained the canned pineapple juice into the diced chicken with the taco spices and immediately fried them. I think it would be good to marinate for at least half an hour, but either way, you get a sweet and spice result. Oh, and homemade refried beans are the only way to go.
Pineapple Taco Chicken Pitas
2 Chicken Breasts
8 Pitas cut in half
1 Bell Pepper
1 Jalapeno
1 Onion
2 cups diced Pineapple
2 cups Lettuce
2 cups Cheddar Cheese
1 cup Corn
1 Tomato
1 cup Pinto Beans
1 clove Garlic
1 tsp Cumin
1 tsp Chili Powder
1 tsp Lime Juice
2 tbsp Canola Oil
Salt
1 tbsp Corn Flour
2 tbsp Chili Powder
1 tsp Salt
1 tsp Paprika
1 tsp Oregano
1/4 tsp Cumin
Dice chicken and put into a bowl. Add oil and taco spices and coat well. Cook in a hot skillet until cooked through. Dice and then saute: bell pepper, jalapeno, and onion. Add chicken and refried beans to veggies and heat through. Cut pitas in half and fill with chicken mixture. Add: corn, pineapple, lettuce, cheese, and tomato.
To make refried beans, heat oil in a skillet and saute garlic until cooked. Smash garlic and add beans and spices, cooking for 5 minutes until heated through. Mash with a fork or potato masher and sprinkle with lime juice.
