Again, I didn't sear the tofu quite right. The end result was a great coating with a spongy interior. I think I could remedy this by cutting the tofu into slightly smaller chunks. The pan had quite a delicious, pungent smell while cooking and the dish was surprisingly sharp-sweet with how much vinegar was added. I think I will try chicken instead of tofu next time.

Sweet and Sour Tofu

500g Extra Firm Tofu
1/2 cup Cornstarch
2 Eggs
Salt & Pepper
2 tbsp Olive Oil
1/2 tbsp Garlic
1 Bell Pepper
3/4 cup Cider Vinegar
1 tbsp Soy Sauce
1/4 cup Ketchup
1/2 cup Sugar
3 Scallions
Toasted Sesame Seeds

Dice tofu, dry, and season with salt & pepper. Coat with cornstarch and brush off excess. Beat 2 eggs together and douse coated tofu in the egg. Fry tofu in oil until crisp. Heat 1 tbsp Olive Oil and fry minced garlic until fragrent. Add diced bell pepper, cider vinegar, soy sauce, ketchup, and sugar. Bring mixture to a boil and cover. When sauce has thickened add fried tofu and toss to coat. Garnish with scallions and sesame seeds. Serve over rice.
