Thoughts

A unique little recipe that tastes like classic burritos. Baking the tacos in cups means a more appropriate appetizer sized snack and easy transport to work the next day. I liked this recipe alot, but its important to not forget the egg wash on the exposed shell at the end. It makes the cup crisp up instead of burn.

Taco Cups

6 tortilla shells
1 egg
500g Ground Beef
1 small Onion
Taco Seasoning
Cheddar Cheese
Salsa & Sour Cream

Brown ground beef with the diced onion and drain grease. Add taco seasoning and 2 tbsp of water and mix. Cut shells into quarters. Grease a muffin tin (12 cups) and place a quarter shell into each one, forming to the sides of the dish. Add a spoonful of meat and top with cheese. Press a second quarter shell into each cup and repeat filling with meat and cheese. Whisk and egg and spread on the exposed shell. Bake at 350F for 15 to 18 minutes and top with sour cream and salsa.
