I finally nailed homemade tortillas! It only took a few too many attempts. I think the main thing I was doing wrong was that the pan was not hot enough and I had not rolled the tortillas thin enough. Oh, and the skillet was delicious as well, but there really is no way to go wrong with that.

Tex Mex Skillet

500g Ground Beef
2 Bell Peppers
1/2 cup Cilantro
1 cup frozen Corn
1/4 cup Lime Juice
1 Onion
2 tsp Worcestershire Sauce
4 cups Cooked Rice (2 cups dry)
1 tbsp Chili Powder
Salt & Pepper
1 tsp Cumin
1 tsp Paprika

Steam rice until cooked & fluffy. Brown ground beef with peppers and onion. Drain grease and add frozen corn. Season with salt & pepper. Add spices and rice and Worcestershire sauce and cook for 5 minutes. Remove from heat and splash with lime juice. Garnish with cilantro.

Homemade Tortillas

3 cups All Purpose Flour
5 tbsp chilled Butter
1 cup Water
1 tsp Salt

Combine flour and salt. Cut in butter and mix until the dough is a sandy consistency. Add water and mix until smooth. Form 14 equal balls of dough. Chill for at least 10 minutes, up to 2 hours. Roll into 6" rounds and fry in a hot pan for 30 seconds each side.
