Yeah, I love enchiladas. Some of these turned out to not be veggie as I had some chicken left over in the fridge I had to use or lose, but I was secretly a bit happy. Knife and fork type food, not much else to say other than enjoy!
Veggie Enchiladas
3 Bell Peppers
2 Red Onions
Salt & Pepper
5 oz Baby Spinach
1/2 cup Refried beans
1/2 cups veggie stock
2 cups red curry soup
1 tsp garlic powder
1 tsp onion powder
1 tsp chili powder
1 tsp cumin powder
Salt & Pepper
Shredded Cheese
Dice peppers & onions and cook in oil until crisp. Add spinach and cook for 2 more minutes. Wrap veggies, cheese, & beans in tortillas. Mix liquids and spice and bring to boil in oven safe pan. Drench tortillas in sauce, cover with cheese and bake at 400F for 15 - 20 minutes.
